Tomato, Pasta Hearty Soup Recipe

Tomato soup is a classic for warm, winter lunches. Add pasta and you have a quick, hearty meal when the weather turns cold. 


1 cup each minced celery, carrot and onion
2 tablespoons extra virgin olive oil
4 cups vegetable broth
15 ounce can tomato puree
2 cups Rotini pasta
Salt and pepper to taste
1/2 cup Parmesan cheese (optional)


In a large soup pot, cook vegetables in extra virgin olive oil until tender.
Add vegetable broth and tomato puree. Bring to a boil.
Add pasta and cook to al dente. Season with salt and pepper.
Serve sprinkled with cheese.

Add a warm roll to soak up all of the tomato goodness.
