Gluten Free Pasta Broccoli Salad

This meatless, healthy, broccoli salad will help you stay on top of those New Year weight loss resolutions. Well, ok, there might be some mayonnaise in this recipe but, it is not much. Just half a cup. 



    Ingredients-

8 ounces gluten free brown rice spiral pasta
1 head of broccoli, finely chopped 
2 cups seedless red grape tomatoes, halved
1/3 cup diced red onion
1/4 cup chopped pecans



   Dressing ingredients

1/2 cup plain Greek yogurt
1/2 cup mayonnaise
1/3 cup red wine vinegar
1 tablespoon sugar
1/2 teaspoon dried thyme
Salt and pepper to taste


   Cooking Instructions

Fill a pan of water and bring to a boil

As water is heating up, whisk together you dressing ingredients. 

In a bowl combine the Greek yogurt, mayonnaise, red wine vinegar, sugar, dried thyme, and salt and pepper. 

Whisk together.



Set aside:

Add pasta to boiling water. Cook pasta according to package instructions. Drain well.

In a large bowl combine pasta, broccoli, tomatoes, red onion, pecans, and salad dressing.

Serve immediately or allow to set for a few hours in the refrigerator.
